Gluten Free Turkey Meatballs
Meatballs…one of my favorite “comfort” foods! This recipe uses turkey instead of beef, which reduces the fat content. It also uses oats instead of breadcrumbs, which are a source of a lot of hidden inflammatory fillers, like sugar, high fructose corn syrup, inflammatory oils, coloring and other chemicals. Using oats also makes these meatballs gluten free. Note: if you’re gluten intolerant / have celiac, make sure to buy oats labeled “gluten free” to avoid cross contamination.
Speaking of hidden ingredients, watch out for hidden sugar in many store bought marinara sauces. Rao’s is a great (and delicious) choice.
Serve over regular spaghetti, gluten free spaghetti, zucchini noodles or spaghetti squash (my favorite)! Or enjoy meatballs on their own as a high protein afternoon snack!
Notes:
Dairy free? Sub nutritional yeast.
If gluten intolerant / celiac, make sure to buy gluten free oats.
Ingredients:
1 lb. ground turkey
2 eggs
1/4 cup gluten free oats
3/4 cup grated parmesan
1 onion, chopped
1 carrot, peeled and chopped
2 tsp. dried oregano
2 tsp. dried basil
1 tsp. salt
1/4 teaspoon black pepper
2 cloves garlic, minced
Directions:
Preheat oven to 375 F.
In a large mixing bowl, combine all ingredients. Stir to mix well.
Line baking sheet with parchment paper
Using your hands, form mixture into 1.5 - 2 in. balls and place onto prepared baking sheet.
Bake for approximately 15 minutes then broil on high for approximately 1 minute. Make sure to watch the meatballs while on broil - they’ll brown very quickly!
